A quick and classic spring canapé of tender green asparagus stems wrapped in Parma ham. Serve this as a canapé or have as a starter with a lemony dressing and shavings of Parmesan cheese.
- 16 spears of fresh, new season British asparagus
- 16 slices of quality Parma ham or pancetta (British air dried hams, such as Woodalls, are also excellent. Alternatively, you could use very thinly sliced belly bacon, this would require a little extra cooking time)
- A little extra virgin olive oil
- Sea salt
- Freshly ground black pepper
- Either preheat a grill to its highest setting, or preheat the oven to 200°C/400F/gas mark 6.
- Taking the base of an asparagus spear between the thumb and forefinger, break at the point where the lower stem gives way to the more tender growth. Repeat this process for the rest of the asparagus, and then trim them all to the same length use a sharp knife.
- Bring a large pan of water to boil, add a generous pinch of salt and cook the trimmed asparagus for 2 minutes. Remove and refresh in cold ice water to stop the cooking process.
- Dry the asparagus well and carefully wrap a piece of ham around each one, starting at the base and wrapping towards the top of the spear, leaving only the point of the spear unwrapped. Lay the spears on a baking tray, drizzle with a little olive oil and a turn of black pepper, and place under the grill or in the oven until the ham begins to crisp – 5 to 6 minutes under a grill, 8 to 10 minutes in an oven.
- Serve immediately.

I’m a nutritional therapist, author, blogger, teacher and mum. I studied at Oxford University from 1999-2003 and have an MSc in Molecular and Cellular Biochemistry. During my degree I became fascinated in the workings of the human body at a cellular level – how what we eat effects the genes and proteins in our body, how the immune system works and how cancer develops. I’m interested in the science of nutrition. I apply my scientific training when I read information about nutrition and I never believe something I read unless I can see evidence to back it up.
I’ve always had a passion for nutrition science, I’ve been writing about nutrition and health for several years and I qualified as a Nutritional Therapist in 2017. I’m also a Holistic Health & Lifestyle Coach and Mindfulness Teacher.
I currently live near Tunbridge Wells with my husband, 3 beautiful children and a gorgeous whippet called Millie! When I’m not working I love foraging, reading, Pilates, cooking, making herbal medicine and going for long walks with my family and my dog.
