Day 56: Cauliflower Couscous (TYOH, July 2021)

This is such an easy recipe – everything goes into the food processor and you just blitz – great to take to work for a quick, healthy and tasty lunch.


Serves 2




  • ½ cauliflower
  • Optional: 1 fennel bulb
  • 2 carrots
  • 1 red pepper
  • 2 handfuls of fresh herbs (coriander / mint / parsley / basil)
  • Zest of 1 lemon
  • Squeeze of lemon juice
  • 2 tsp. capers
  • 1 tsp. turmeric
  • 2 tbsp. olive oil
  • Sea salt
  • Freshly ground black pepper

To Garnish

  • ½ pomegranate – seeds removed
  • Handful of shelled pistachio nuts
  • Handful of pine nuts
  • Handful of dried cranberries




  1. Place all of the ingredients in a food processor and blitz to a couscous consistency. Season with salt & pepper and extra lemon to taste.
  2. Place the couscous into a bowl and scatter over the pomegranate seeds, pistachio nuts, pine nuts and dried cranberries. Give everything a good stir and serve.
