  • 1 avocado
  • 4 Portobello mushrooms
  • Optional: splash of white wine vinegar for the egg poaching water
  • Sea salt and freshly ground black pepper

  2. Place the mushrooms and cherry tomatoes onto an oiled baking sheet and place under the grill for 10–15 minutes.

  5. Crack the eggs into 4 cups then add each egg carefully to the boiling water. Poach for 3 minutes for perfectly runny yolks.
  6. Divide the mushrooms and tomatoes between 2 plates. Top each mushroom with 2 slices of avocado and a poached egg. Season and serve immediately.

Healing Stewed Apples

Research has shown the incredible anti-inflammatory effect of stewed apple on the gastrointestinal tract and microbiome. Stewing apples helps to pre-digest the carbohydrate, creating a viscous quality rich in pectin that mimics the healthy lining of the gut.

Makes: 4 servings

Ingredients

First stage

  • 6 Bramley apples or 8 eating apples
  • 2 teaspoons cinnamon
  • ½ cup raisins, sultanas or chopped dates
  • ½ cup water

Optional second stage

  • Organic coconut yogurt
  • 6–8 blueberries and 4–5 almonds in their skins
  • 1 tsp Manuka honey or raw honey

Method

  1. Peel and core the apples and chop them into small pieces. Sprinkle over the cinnamon and toss to coat thoroughly.
  2. Put the apples, dried fruit and water into a saucepan and cover.
  3. Cook for about 15 minutes, stirring regularly, until soft and a deep russet-brown colour. The colour should be a russet brown with the cinnamon effect.
  4. The apples may be eaten warm or cold. Store in the fridge or freeze in individual portions. Add the second stage ingredients before serving.

Note: if apples cause bloating for you, start with a teaspoon or two and gradually increase the amount.

Frittata

Serves: 2–4

Ingredients

  • Fat of choice for frying
  • 1 onion, thinly sliced into half-moon shapes
  • ½ celeriac, peeled and cut into thin slices
  • 5 large eggs
  • Sea salt and freshly ground black pepper

Method

  1. Heat 1 tbsp fat in a large frying pan and add the onions and celeriac. Season with salt and pepper. Turn the heat to low, put a lid on, and cook for 10 minutes until tender without browning.
  2. In a bowl, beat the 5 eggs. Add the cooked onion and celeriac and mix.
  3. Put the pan back on medium heat with another tablespoon of fat. Pour in the egg mixture, ensuring it reaches the edges. Turn heat to low and cook for 20 minutes without a lid.
  4. Finish under a hot grill for 3–4 minutes until fully set, or carefully turn the frittata in the pan. Allow to settle for 5 minutes.
  5. Serve cut into wedges, warm with a salad. Works well cold — wrap in cling film and refrigerate.
