Balsamic & Herb-Stuffed Pork Tenderloin

Serves: 3–4  |  Prep time: 15 minutes  |  Cook time: 25–30 minutes

A beautifully savoury pork dish filled with herbs, seeds, and Mediterranean flavours, finished with a tangy balsamic glaze.

Ingredients

For the pork

  • 1 pork tenderloin (about 450–500 g)
  • Sea salt and black pepper, to taste

For the stuffing

  • ⅓ cup sunflower seeds (about 45 g)
  • 4–5 sun-dried tomatoes, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon capers, drained and chopped
  • 1 tablespoon fresh oregano, finely chopped
  • 1 teaspoon fresh rosemary, finely chopped
  • 1 tablespoon olive oil

For the glaze

  • 2 tablespoons balsamic vinegar
  • 1 tablespoon extra virgin olive oil
  • Juice of ½ lemon
  • 1 teaspoon Dijon mustard

Method

  1. Mix the sunflower seeds, sun-dried tomatoes, garlic, capers, oregano, rosemary, olive oil, salt and pepper together to make the stuffing. Set aside.
  2. Preheat the oven to 200°C (180°C fan). Place the pork tenderloin on a chopping board and carefully slice it lengthways, stopping short of cutting all the way through. Open it out like a book.
  3. Season the inside lightly with salt and pepper. Spread the stuffing evenly over one side, then fold the pork back over to enclose the filling. Secure with kitchen string if needed.
  4. Whisk together the balsamic vinegar, olive oil, lemon juice and Dijon mustard to make the glaze.
  5. Place the stuffed pork in a lightly oiled roasting dish. Brush generously with the glaze. Roast for 25–30 minutes, basting once halfway through, until just cooked through and still juicy.
  6. Rest for 5 minutes before slicing. Spoon over any pan juices to serve.

Serve with roasted vegetables, a warm cauliflower salad, or steamed greens dressed with olive oil and lemon.
