For the chicken
- 4 × 85 g chicken breasts (3 oz each), or 2 large breasts divided
- 3 tablespoons olive oil
- 4 cloves garlic, crushed
- 1 tablespoon lemon juice
For the dressing
- 2 organic egg yolks
- 2 tablespoons lemon juice
- 1 tablespoon Dijon mustard
- 1 tablespoon minced anchovy fillets
- 80 ml extra-virgin olive oil (⅓ cup)

Transfer to a medium bowl, then whisk in Dijon mustard, followed by the egg yolks, then lemon juice.
